I bought a 4 pound bag of spinach at costco yesterday because I didn't like the look of the spinach in the smaller package. So this is my mock spanakopita with mushroom and chicken. Used a spoonful of cottage cheese with feta instead of all feta and I only used half the avocado to cut some of the calories from the cottage cheese. It's not bad and cooking the spinach means I stand a fighting chance at getting through the bag of spinach before it goes bad.
